There are generally two types of noodles we cook, one is fried noodles or dried noodles, and the other is noodles with soup. Next, I will introduce two ways of cooking noodles.
1.Noodles with soup
Shrimp, veggies and noodles. Plus, a Green red pepper garnish. Done.
And you can easily adapt this recipe to add (or omit) vegetables to your liking. You can also swap out the shrimp for a different kind of protein like chicken or tofu if you want to keep it meatless.
INGREDIENTS:
medium shrimp, peeled and deveined
1 tablespoon olive oil
salt and freshly ground black pepper, to taste
1 pound linguine
2 red pepper, 2 green pepper, shredded, for garnishment.
1/4 teaspoon sesame seeds
FOR THE SAUCE
1/4 cup reduced sodium soy sauce
2 tablespoons peanut butter
2 tablespoons vegetable oil
2 tablespoon sesame oil
1 teaspoon red chili paste with garlic, optional
DIRECTIONS:
1.In a small bowl, whisk together soy sauce, vegetable oil, sesame oil and red chili paste; set aside.
2.Preheat oven to 400 degrees F. Lightly oil a baking sheet or coat with nonstick spray.
3.Place shrimp in a single layer onto the prepared baking sheet. Add olive oil, salt and pepper, to taste. Gently toss to combine.
4.Place into oven and roast just until pink, firm and cooked through, about 6-8 minutes; set aside.
5.In a large pot of boiling salted water, cook noodle until it turns soft; pour soy sauce mixture, shrimp, mushroom or youcan add some cilantro.
6.Serve immediately, garnished with sesame seeds, if desired.
